Pork loin stuffed with Parma ham, onions, garlic, leeks, thyme and black pudding. Served with a carrot purée, black pudding and sausage meat fritter, chargrilled asparagus, a shallot jam and finished with crackling, sage leaf and a creamy whole-grain mustard sauce.
